Opening Day Recipe for the Farmer’s Market!

The Uptown Westerville Farmer’s Market opening day is today (!!!), Wednesday, May 6 from 3-6pm. In honor of this seasonal treat, we’ve selected a recipe that can be made “farm-fresh” from the market! 00311We’re sharing this Oven Roasted Carrot Salad from Jennifer Olvera at serious eats.

 

What you’ll need:

Non-stick cooking spray

1 1/2 lb. carrots, peeled and sliced lengthwise into long sticks

2 tbsp. olive oil

1 tbsp. red wine vinegar

1 1/2 tsp. honey

Kosher salt and freshly ground black pepper

1 1/2 tbsp. fresh-squeezed lemon juice

2 oz. feta cheese, crumbled

 

Directions

Preheat oven to 400°F.

Line a 9- by 13-inch baking dish with foil and spray with cooking spray. Add carrots, olive oil, vinegar, and honey.

Season lightly with salt and generously with pepper and toss to combine. Transfer dish to oven, stirring periodically, until edges are starting to char and carrots are softened but still have some crunch, about 25 minutes.

Remove from oven, toss with lemon juice and let cool to room temperature. Add feta, season with additional black pepper, toss and serve.
